Garden Salad

My garden salads are pretty fab! I'm almost famous for them! LOL!

Acorn Squash with Vinaigrette Dressing over Greens

I saw this made on Everyday Foods...and made it for dinner that night.
It was pretty good and I've made it about 4 times now.
I don't make the goat cheese rounds with mine...but they sound good to me!

Stuffed Tomatoes

I LOVE to stuff things!
Tomatoes, Zucchini, Cabbage, and Bell Peppers...just to name a few.
My hubby can't eat rice very often, so I use quinoa as my base.
I saute'
onions,
celery,
garlic, and
carrots until tender.
I add them to the quinoa with one egg,
some frozen peas,
tomato sauce,
salt, pepper,
and Garlic Mrs. Dash.
Poor some more tomato sauce on top,
and bake until heated throughout.

Sweet Squash Bake

Jell-O soaked Angel Food Cake

Light. Delicious. Top with whipped cream.

Snickers Stuffed Cupcakes

Fill cups halfway. Place snack-size Snickers bar in each cup.
Cover with more batter. Bake as usual.
Serve with a whipped cream topping.

French Fries

Much better than any restaurant!
Bake potatoes first.
Then slice into fries.
I cover a cookie sheet with foil.
In a large bowl I toss the potatoes in some Olive Oil.
Spread out on cookie sheet.
Sprinkle on desired amount of salt.
Bake about 20 minutes at 350 degrees.
Switch to BROIL the last 3-5 minutes.
Keep watch - you don't want to burn them!

Oreo Balls

This recipe is just too easy!
1 package Oreo cookies
8 oz. cream cheese
Mush/Mash/Mix it all together until well combined.
Form into balls. (I find it use a cookie scoop)
Refrigerate until firm.
Melt white chocolate in a pan on the stovetop.
Remove from heat when melted.
Dip oreo balls into melted chocolate.
Top with Chocolate sprinkles.
Refrigerate, again, until set.

Angel Lush Cake

Bake, or buy, an Angel Food Cake.
Cut into three layers with a serrated knife.
Mix together cool whip, crushed pineapple, and [I think] cream cheese.
Spread mixture in between cake layers.
Top with cool whip and strawberries.

Tuna Salad, Rice Crackers & Chocolate Cookies

My hubby eats tuna for lunch, quite often. So, in an effort to make a meal out of it....once in a while I dress it up a little. Easy...and he loves it.
