Veggie Fajitas

Here's our take on Veggie Fajitas.





To get them done quicker, steam your veggies until they can be poked with a fork, then throw them into the saute' pan.

Broccoli
Carrots
Zucchini
Onions
Celery
Salsa
Garlic
Olive Oil

Wrap tortillas (Hubby can only eat corn...but flour will hold more stuff!) in aluminum foil and put in a 250 degree oven. No need to preheat.
Let them warm up while you:

Saute' onions and garlic in olive oil. Add other veggies, saute for a few minutes until starting to brown. Add salsa and seasonings of your choice. (I used Extra Spicy Mrs. Dash, a little Chili Powder, salt and pepper.)
