Salmon, Quinoa & Asparagus

One of our favorite dinners!
BBQ'd Salmon, Quinoa, and Grilled or Baked Asparagus

My recipe for Quinoa (pronounced Keen-Wah) is:

1 C. Veggie Broth
1C. Water
1 C. quinoa

Put all three in a saucepan, on high until it boils.  Then turn down to about 3 or 4, put a lid on and let cook for 10-12 minutes.  Fluff with fork and serve!  Mmmm...Mmmm....Mmmm...

I do not like mushy asparagus!  Ewww!  My favorite way to prepare Asparagus is in the oven.
I cover a cookie sheet with tin foil for easier clean-up.  Spray with Olive Oil.  Lay your asaparagus spears down.  Spray them with more Olive Oil.  Sprinkle with Salt.  Bake at about 350 degrees until you can poke with a fork.  Not a second longer! :)
